Mustards
Mustards are an essential foundation in the kitchen. Homemade dressings taste great with a spoonful of a creamy style mustard, added to mayonnaise they create a fantastic sauce for burgers, and added to olive oil and vinegar they become the star flavor in marinades and dressings. We make two basic mustards at Black Dog farms, a creamy, country style mustard and a nice earthy grainy mustard, then we add flavors to each to create a unique and interesting condiment experience.

Green Peppercorn - A nice flavor for pork or on poached seafood. This mustard has the natural mustard heat with a touch of tang from the green peppercorns and background spices to balance it all out.
Island Spice - A grainy type with a hint of tropical spices. This works fabulous with potato and/or green bean salads, meat dishes or sandwiches. It is also a foundation for salad dressings. This is my 'go to' mustard for that extra zing.
Chipotle Honey - One of the most popular mustards we make. A creamy style mustard with the smokey red heat of chipotle peppers. Great on its own as a dip, on a sandwich or burger, or in a Mexican style salad dressing.
Wasabi Ginger - Wasabi and mustard are natural together, then we take it to the next level with fresh ginger. This makes a fantastic dip for wontons or eggrolls, or to top sushi, fish salad or crab cakes.
Ginger Curry - Another best selling mustard. Fresh, local ginger and our Island Curry Seasoning mix makes this creamy style mustard something you won't soon forget. Grilled sausages and sweet potatoes, rice dishes, meat and tofu, they all transform into something amazing with this mustard. We like to use it as a dip for pupus too.
Pineapple Mustard - If you want a cool, tropical fruit based mustard, this one is for you. Creamy mustard, a hint of Kauai honey and the refreshing taste of pineapple are great with ham, spicy sausages, potatoes, sandwiches and a natural as a marinade with oil and vinegar.
Jalapeno Lime Mustard - A must for jalapeno fans, a grainy style mustard with the flavor of penos, lime, and a hint of warm spices. Serious mustard for foodies, great on hot dogs, sandwiches, burgers, in salad dressings, mixed with mayo, you name it.
Honey Tarragon Mustard - A creamy mustard with the lovely flavor of tarragon infused throughout, with just the right amount of local honey. This makes the ultimate in mustard based dressings, and is fantastic with delicate flavors like fish and pasta.
Orange Rosemary Mustard - Our abundant orange trees make this grainy style mustard shine, with the earthy tones of rosemary to balance the flavors. This is the best mustard for all kinds of sandwiches, especially where cheese takes a star role. Cool and creamy, warm and earthy all at the same time.
Lime Thyme Mustard - Similar to our Orange Rosemary Mustard, this one has the touch of lime that pairs well with fish and rice dishes.
Black Peppercorn Mustard - There is something to this mustard that just works. Nice freshly ground flakes of black peppercorn with a creamy style mustard. We use this on everything, it has a nice neutral flavor that enhances whatever you are making, or shines on its own.
Mustard Coated Prime Rib
1 tablespoon Black Dog Farms Rosemary-Pepper or cracked pepper
1 tablespoon fresh lemon juice
2 tablespoons creamy or grainy mustard
1 boneless prime rib roast, 4-5 pounds
In small bowl, mix together rosemary pepper, mustard and lemon juice and rub mixture all over roast. Put the roast in roasting pan on a rack if possible. Allow the meat to rest until it reaches room temperature. Bake in a preheated oven at 325 degrees and cook until desired doneness.
Remove from oven and allow to rest 20 to 30 minutes under foil before serving.
Mustard Butter
1 Tablespoon mustard of your choice
1 stick of unsalted butter
Mix mustard in softened butter, chill. Let the flavors meld for at least an hour before using, this can keep in the refrigerator for several weeks. A chefs secret, they often top meat coming off the grill with a slice of Mustard Butter. It is also delicious on hot from the oven rolls or bread. Fabulous on sandwiches too!
Creamy Mustard Sauce
1 Cup Sour Cream
1 Tablespoon creamy style mustard, any flavor
1 Tablespoon minced sweet onion
Salt and pepper to taste.
Mix ingredients together over low heat for a delicious sauce over vegetables or mix cold and serve over a white fish. Will last in the refrigerator for a few weeks.
Herb Mustard Rub
1 diced small onion or half of a large onion
3 Tablespoons creamy style mustard, any flavor
2 teaspoons fresh chopped parsley (or other favorite herb) or 1/2 teaspoon dried herb
Dash of black pepper
Combine ingredients and spread on chicken, beef, pork, or lamb and roast in the oven. Amazing and so easy! The flavors seep in and a delicious crust forms over the meat.
